Using the Les Meuniers de Clémence as its starting point, the Bises cuvée tops it all off with the addition of organic, local honey in the dosage—an experimental substitute for their usual addition of organic cane sugar. Using organic, local honey sourced from bees who live in the forest neighboring the vineyards, the family has achieved an impressive wine that encapsulates the Vrigny terroir from beginning to end.
